Curtis liked to think he could do everything on his own. He often told friends that he didn't need anybody else; he was fine all by himself. On those rare occasions when Curt was feeling down and in need of a friend's support, he usually found himself alone. Everyone figured he really didn't need anyone else, and so he was lonely. No matter how strong or powerful or talented we might be, we all need the support of friends. Our greatest friend is, of course, Jesus Christ. We need never feel alone when we have the Spirit of the Lord with us. Accept the helping hand of the Lord, and find out what real strength is all about.
Today's Thought: Let me lose not only weight, but also false pride!

Sugar-Free Carrot Cake
6 egg whites
1 c apple juice concentrate
1/3 c canola oil
1/3 c unsweetened applesauce
1/4 c water
3 c flour
1 Tbs baking powder
1 tsp baking soda
1 tsp salt
2 tsp cinnamon
1/4 tsp nutmeg
2 c raisins
2 c shredded carrots
Preheat oven to 350° F. Stir together egg, apple juice concentrate, oil, applesauce and water. Set aside. Sift together dry ingredients. Put raisins in warm water to plump. Meanwhile, grate carrots, and spray 2 round 9" cake pans with non-stick pan spray. Gently stir wet ingredients into dry ingredients just until moistened. Drain raisins, and fold in carrots and raisins. Pour into cake pans, and bake at 350° F. for 25 to 30 minutes. Then reduce heat to 325° F. for 8 to 12 more minutes. Serve cold.

Lettuce! Celery! Low-fat cottage cheese! Yeesh! It never got any more interesting. The same old bland foods got tiresome after awhile. Debbie thought she would go crazy before long. She knew what she was doing was a good thing. She really wanted to lose weight. She wanted to look and feel great. Sometimes she didn't know whether it was going to pay off. She believed that God was happy with her desire to lose weight. She trusted that He would help her. Often, it was only the strength she received from trying to please God that kept her going. She was thankful that God gave her that kind of strength.
Today's Thought: The only thing I'll give us is being fat!

Time your eating and activity patterns correctly. Don’t go all day without eating or you’ll be more like to binge on unhealthy foods when you do finally eat. If most of your physical activity takes place during the day, make breakfast and lunch your larger meals. Enjoy small, healthy snacks in between meals. Keep things light and lean in the evenings. Remember, food is fuel. Use the energy when you need it most.

Diabetic Pumpkin Pie
2 eggs
2 tbsp. liquid sweetener
3/4 tsp. cinnamon
3/4 tsp.nutmeg
1/2 tsp. ginger
1/4 tsp. cloves
1 1/2 c. canned pumpkin
3/4 c. evaporated milk
3/4 c. orange juice
1 unbaked 9 inch pie shell
Combine eggs, liquid sweetener, spices and pumpkin; blend well. Add milk and orange juice gradually, stirring until blended. Pour into unbaked pie shell. Bake for 10 minutes at 350 degrees.

Kip was amazed at how easily he took the stairs. When his kids had begged him to climb to the top of the Statue of Liberty with them, he had squirmed. He remembered what a labor it had been when he was fat. He knew that he never would have made it before. Instead of a painful trauma, he found the climb a relative breeze. Thank God he had been able to lose the weight. It was the best move he ever made. It had been tough, but Kip had relied heavily on God to help him out. While he had been dieting, he had needed God's strength. Now that he was thin, God let him use his own strength once again.
Today's Thought: Food gives us temporary strength. God gives us strength forever!

Are you relying too heavily on that multivitamin supplement? The best way to get vitamins and minerals is through food, not pills. Try swapping your favorite junk food snack for a piece of fresh seasonal fruit, like a Fiji apple or an Anjou pear, or munch a serving of baby carrots and cucumber spears with hummus.

Apple Crisp
Sliced apples, enough to fill 9-inch
square baking dish 3/4 full
2 tablespoons flour
Sugar substitute to equal 1 cup granulated sugar
Cinnamon
Topping
1/2 cup flour
1/2 cup quick oatmeal
1/4 cup margarine
1 teaspoon baking soda
Preheat oven to 400 degrees F.
Place apples, flour sugar substitute and a sprinkle of cinnamon in 9-inch square cake pan.
Mix topping ingredients together like a pie crust and add to apples.
Bake for 15 minutes, then reduce oven temperature to 350 degrees F and continue baking for 40 to 50 minutes.
NOTE: Directions for substituting sweetener for sugar are on the box.

Leo wanted to remember how tough it was. He'd lost the weight, but he never wanted to get back into the poor shape he'd recently been in. It would be way too easy to fall back into bad habits, thinking that the battle was won once for all time. It was nice to have succeeded. But Leo planned to make sure his success lasted a good, long time. It is nice to overcome obesity, but it is an ongoing battle. We should ally ourselves with the one true conqueror: Jesus Christ. With Christ's help, we can continue to triumph over our weight problems. He grants not only peace, but power to overcome any obstacle.

1 cup flour
1 tsp baking powder

1/2 cup diet margarine, melted
3 tbsp cocoa

2 eggs
1/4 cup canned evap. skim milk
5 pecan halves, chopped
Directions
preheat oven to 350 degrees. In a bowl mix flour, baking powder and
salt. Beat eggs. Melt margarine. Add all ingredients to flour mixture.
Bake for 20 minutes.

Chris thought he was going to die. Why did the gym teacher make the fat kids run track? It wasn't human. His pulse was pounding so hard he thought his eyes might pop out. The finish line looked a million miles away. It wasn't worth it. Somehow he had to lose some of his excess baggage. Nobody could go through life feeling as bad as he presently felt. We need to overcome our weight problems. Life is not meant to be a struggle, but a blessed gift from God. If we will work to be overcomers, then God will bless our efforts and carry us over the finish line.
Today's Thought: With each pound I drop, I move faster toward my goal!

The price we pay for convenience foods is not only the higher sodium content, but the higher price. You can gain better control over sodium consumption by changing to a recipe based plan for whole, fresh foods. Low-Fat Pumpkin Muffins
1 cup canned cooked pumpkin
1 cup bran cereal shreds, crushed
3/4 cup skim milk
1/3 cup light or dark corn syrup
2 egg whites, slightly beaten
1-1/4 cups all purpose flour
1/3 cup sugar
2 tsp. baking powder
1/2 tsp. salt necessary
1/2 cup raisins
Preheat oven to 400°F. Spray 12 2-1/2 inch muffin cups with cooking spray. Combine pumpkin and next 4 ingredients in a bowl. Combine remaining ingredients in another bowl. Add pumpkin mixture and stir until well blended. Spoon into prepared muffin cups. Bake 20 minutes or until toothpick inserted in center comes out clean. Cool in pan 5 minutes. Remove and cool on wire rack.
This recipe serves 12 people. Due to the nature of this recipe, it adjusts the number of servings in multiples of 12 only.

What a marvelous feeling, being able to stand up in front of the diet group and tell them she had lost forty-four pounds! Marcie never thought she'd see the day. She remembered all the times when, with great embarrassment, she had to confess that she was not even close to her goal. Those days were behind her. All the doubts and guilt were over. The groups had been a great help, too, as God had been. Her faith was a large reason that she was able to stay with it as well as she did. Praise God, everything worked out. She held her head high and shared her great news with the group that had helped her so much.

Today's Tip: Buying the Healthiest Dairy Foods.
Milk, yogurt and cheese are excellent sources of calcium, but regular varieties have too much saturated fat. Switch to low-fat or nonfat varieties (3 grams or less of total fat per serving).

LEMON CHEESECAKE
2 cups nonfat yogurt cheese
7 tablespoons sugar (or to taste)
1 tablespoon cornstarch
4 egg whites, lightly beaten (or 1 egg and 2 whites)
1 lemon, juice
1 teaspoon vanilla
1/2 teaspoon grated lemon peel, or 1/4 teaspoon lemon extract
Preheat oven to 325 degrees. Lightly grease a 7-inch springform or 8-inch pie pan.
Combine yogurt cheese, sugar, cornstarch, lemon juice and vanilla, mixing gently with a fork or wire whisk until well blended. Stir in the eggs.
Pour into prepared pan and smooth the top with a spatula. Bake until the center is set, 20 to 25 minutes (pie pan) or 55 minutes (springform). Cool slightly and refrigerate, uncovered, for 24 hours.
Serves 8.

SEPTEMBER is on Doubt
Whenever we involve ourselves in a process that takes time, it is only natural to move through periods of doubt. Doubt is not necessarily a bad thing. It can help us reassess our desires and motives. We ask ourselves why we are doing what we do. People diet for all different reasons, some of them good, some of them not so good. When the pounds don't fall off quite as fast as we think they should, it causes us to feel frustrated and hopeless. Doubt sets in. If we are to fight the negative effects of doubt, we will definitely need help. We can turn to friends for help when the doubts mount up, but more importantly, we can turn to God, who knows what is on our heart before we even speak to Him. He will be true to strengthen and encourage us. In the light of Christ, even our darkest doubts are dispelled. Open your heart to the light of Christ and experience the joy as your doubts fad into nothingness.

It is not that we think we can do anything of lasting value by ourselves. Our only power and success come from God.
Muriel knew she couldn't do it alone. She wasn't strong enough. Her friend Ann told her that one of her strengths was realizing she was weak. Too many of her friends tackled diets on their own and failed miserably. Well, Muriel wasn't going to make the same mistake. She wanted help from the outset. If we realize our weaknesses and limitations, then we are better able to cope with them. God will help us be honest with ourselves, so we can work to turn our weaknesses into strengths. Pray to God for that insight.

Three Ingredient Peanut Butter Cookies
1 organic, cage-free egg
1 cup organic peanut butter (or almond butter)
1/3 cup organic honey
Optional: organic fair-trade chocolate chips (1/2 cup), or organic raisins (1/2 cup), or 1/4 cup shredded coconut and 1/4 cup pitted dates, or 1/4 cup chopped dried fruit and 1/4 cup nuts…or you choose what to put in!
Directions:
Oven 350
1. Mix all the ingredients together, stirring well.
2. Line a cookie sheet with parchment paper. Drop the batter on the paper, a heaping tablespoon for each cookie.
3. Bake for 8 minutes. Cookies should start to brown slightly around the edges. They may seem too soft, but if they’re starting to brown they’re good to go!
4. Let the cookies cool for 5 minutes (they will firm up as they cool).
Makes 18-24 cookies

Herm couldn't figure out why he wasn't losing weight. He knew he wasn't eating as much as he had before he retired. When he was on the road, he ate like a horse. Now that he was home around the house all the time, he ate a lot less. Something definitely wasn't right. Losing weight requires much more than just changing our eating habits. We need to change our whole outlook on things. Sometimes we need to cut back on food while increasing the amount of exercise we get. Other times we need to give up certain foods altogether. We need to evaluate deep inside how we live out our lives, and make adjustments necessary to succeed in losing weight.
Today's Thought: Dieting doesn't happen on its own. It takes a conscious effort!

Kashi Fudge Brownies with Heart
1 1/2 cups Kashi Heart to Heart Cereal, crushed*
1/3 cups unsweetened cocoa powder
1/3 cup whole wheat flour
1/2 cup walnuts or pecans, chopped
1 teaspoon baking powder
1/4 teaspoon salt
6 ounces non-fat yogurt
1/2 cup pure honey
1/2 cup unsweetened applesauce
1 teaspoon pure vanilla extract
In a medium sized bowl, combine Kashi Heart to Heart cereal, cocoa powder, flour, walnuts, baking powder and salt. Mix well. Set Aside. In a large bowl, combine yogurt, honey, applesauce and vanilla. Mix until smooth. Using a spatula, add dry ingredients to wet ingredients, mix until well blended. Bake at 350 degrees for 30 to 40 minutes or until knife comes out clean. Let cool and serve.
* Place Kashi Heart to Heart cereal in a plastic bag and crush with a rolling pin into coarse flour.

Jeff was suspicious. He couldn't figure out why his friends were trying to be so helpful with his diet. What could they possibly get out of it? Whenever he was with them, they avoided talking about food, and they ate salads and cottage cheese instead of normal food. They wouldn't even have dessert. It made Jeff feel a little awkward and guilty. He couldn't believe his friends would go to so much trouble to help him out. Some people wonder whether or not God really cares about their diet problems. The fact is, He cares about everything that is important to us. Take comfort in the fact that God cares deeply, and He will do everything He can to help you.

Cook with less fat by using non-stick skillets.
Blot all fried meats on paper towels.
Add a spoon of water or broth as needed instead of more fat when sautรฉing onions and vegetables.

Low Fat Orange Creamsicles
1/4 cup sugar
1/4 cup water
6 ounces frozen orange juice concentrate, thawed
3/4 cup low-fat buttermilk
Heat sugar and water in a small heavy-bottomed saucepan until sugar is dissolved. Allow to cool for a few minutes. Stir thawed orange juice concentrate and buttermilk. Add syrup. Pour into Popsicle molds and freeze.

Scott was cranky. He had been on a diet for two weeks, and it wasn't getting easier. Now his friends wanted to drag him off to some stupid prayer meeting at the church. Begrudgingly, Scott agreed to go. Before long, his mind was off of food and onto the message the pastor was delivering. Scott got caught up in praying for the needs of others, and he completely forgot about his own hunger. The time passed quickly, and Scott was surprised. His friends just smiled and told Scott that there was a lesson there for him somewhere. When we turn our attention from ourselves to others, great things can happen.

A study of more than 125,000 people published in the June 19, 2001 issue of the Annals of Internal Medicine found that eating even one extra serving of a fruit or vegetable daily lowers the risk of heart disease by 4%. 1 small box jello (any flavor)
1 cup hot water
3/4 cup cold water
1 small container Nonfat Yogurt (any flavor)
1 cup low fat cool whip
Mix jello with hot water then cold water. Chill until thick. Whip until frothy. Add container nonfat yogurt and 1 cup cool whip. Whip again. Chill until set.

Josh was feeling down and depressed. Nothing seemed to be working out for him. His job was a nightmare, his social life was even worse, and he was lonely. He sat alone and ate. His weight had skyrocketed. He wouldn't eat so much if he had someone to talk to. His main problem was that he just didn't have anything else to do. Often, the most comforting thing we can hope for is someone to spend time with. Company gives us pleasure and takes our mind off eating. It is up to us to find people to spend time with when that is the only reason we sit and stuff ourselves. God sends us comfort in many ways. Seek the comfort of company.

Looking for a new vegetable? Try artichokes. To cook, place artichoke in a microwavable dish, stem up with 1/4 c water and 1 tbsp lemon juice. Microwave high 5-7 min. Let stand 2 min. Peel and enjoy--Only 25 calories!

Apple-Cinnamon Wantons
butter-flavor cooking spray
2 medium apples, peeled, cored
wantons
powdered sugar
Place wanton wrappers on a flat surface. Drop apple mixture by teaspoonfuls onto center of each wrapper. Moisten edges of wrapper with wet fingers, fold over one corner to make a triangle and press sides together to seal. Transfer filled wrappers to prepared baking sheet and coat surface with cooking spray. Bake until wantons are golden brown, about 15 min. Place wantons on individual plates and sift with powdered sugar. Serve with ice cream on the side.

God will help us as we diet, but the weight of the responsibility still lies with us. We have to really want to lose weight. God will not do it for us. Faith is the key to unlocking God's power in our lives. When we put our faith in God, He is able to lead us in new ways. He fills us with strength, courage, purpose, and the will to succeed. God has already placed those qualities in each one of us. Faith is our way of allowing God to show us how to use what we've already got. Let us remain open to
God so we can succeed in losing the weight that doesn't need to be there.

Today's Tip: Too Little of a Good Thing
But don't try to eliminate fat altogether, as dietary fat is necessary to maintain a healthy body. It is a vital component for building body tissue and cells, and it aids in the absorption of some vitamins and other nutrients. Many people eat too much of the bad fats, but also eat too little of the good fats required for optimal health.

Grilled Dark Chocolate Sandwich
1/4 c fat-free evaporated milk
3 oz bittersweet chocolate, finely chopped
1 1/2 tbs butter, softened
8 slices thin whole-wheat or white bread
3 tbs semisweet chocolate chips
Heat evaporated milk just until boiling. Add chocolate, let stand for 1 min, then whisk until smooth. Let cool slightly. Spread butter on one side of each slice of bread. Divide the chocolate mixture on the unbuttered side of 4 slices, leaving a little border. Press chocolate chips into the chocolate. Cover with the remaining slices of bread, buttered-side up, and press lightly. Cook sandwiches in a large nonstick skillet over medium-high heat for 1 to 2 min. Turn over, press with a spatula, and cook until nicely browned and the chocolate is barely melted, 30 seconds to 1 min. Serve warm.

Andrea was furious. She hadn't wanted to go on the hike in the first place, and now she was falling farther and farther behind. No one would give her time to catch up. Some of them were even laughing at her. It wasn't her fault she wasn't in good physical condition. She had to carry around a lot more weight than they did. It just wasn't fair. In this life, we don't get a lot of breaks. Just because we're overweight doesn't mean we deserve special treatment. God doesn't give preferential treatment. He wants all of His children to be the best they can possibly be. He expects us all to do our best.
Today's Thought: I am trying my best to please God!

1 Milk Chocolate Bar (1.5 Ounces),

1 Small Banana, cut into 12 pieces
Toast Marshmallows on Skewers until browned. To make a smore, ease a marshmallow onto a gingersnap, top with 1 piece chocolate and 1 piece banana. Cover with other gingersnap. Press down until chocolate melts.

Terry had been a savior. It was so nice to find someone who had gone through a long, hard diet before. God had really brought them together. At the time Lisa needed someone most, Terry had miraculously showed up. Lisa wondered whether Terry wasn't an angel in disguise. She had been such a great help. God often answers our prayers through the people He sends into our lives at key times. It is good to seek out the support of others who can relate to what we're going through. Pray that God will lead you to such people, so they might accompany you through the tough times.

4 egg whites
1/2 cup sugar
1 tbsp vanilla
1/2 cup cocoa powder -- sifted
1/2 tsp baking powder
1/4 tsp salt
1/2 cup flour
1 cup marshmallow cream
Preheat oven to 325ยบ. Prepare a 9x13 pan with cooking spray and flour. In a mixing bowl, combine baking powder, cocoa/carob powder, salt and flour. In another mixing bowl, combine egg whites, sugar, vanilla, and marshmallow cream. Mix dry ingredients with wet ingredients. Bake for 18 mins.

strong state of mind are essential for a productive, long-lasting
diet. God gives us strength of character and determination. There is
no tribulation, even dieting, that God can't get us through. Diets
may not ever get easy, but they do get manageable when we add God's
strength and perseverance to our own.

Today's Tip: Check Your Skin
Skin cancer is the number one cause of cancer in the United
States. Although most skin cancers can be cured if treated
in time, thousands of Americans die from it every year. It
is therefore very important to thoroughly examine your body
regularly for any lumps, bumps, growths, rashes, or other
abnormalities. Have somebody help examine you or use a
mirror so that you don't miss any areas. Show any findings
to your physician, who should also be examining your skin
regularly.

Iced Creme Caramel Soda
2 tbl dry milk powder
1 cup A&W diet cream soda
2 tbl caramel syrup
6-7 ice cubes.
Blender smooth dry milk powder, cream soda, caramel syrup, ice
cubes. Serve this wonderful treat in a tall, ice cream soda glass.

That's why I work and struggle so hard, depending on Christ's mighty power that works within me.
Gail couldn't belive how much her life was changing. All through
college, Gail hadn't even set foot in a church. The only social
situation she had been comfortable in was where food was involved.
College had been lonely and unfulfilling, not to mention fattening.
Just recently she had attended church with her new neighbor, and it
was like coming home. She felt comfortable and accepted. Her
new-found relationship with Jesus Christ gave her a different
perspective on her life. She suddenly found a deep concern for her
appearance and health. As God became more and more a part of her
life, Gail vowed to become the best person she could possibly be.

Today's Tip: Signs of Dehydration
It is essential that you are aware of the warning signs of
dehydration and heat stress.
Early signs include:
-fatigue
-lightheaded
-appetite loss
-dark urine with a strong odor
-flushed skin
-heat intolerance
Severe signs include:
-difficulty swallowing
-sunken eyes and dim vision
-stumbling
-painful urination
-clumsiness
-numb skin
-shriveled skin
-delirium
-muscle spasms

1 Point Dessert
1 box of Fat Free Angel Food Cake (2 pts for the whole box)
1 box Sugar Free Black Cherry Jello (1 pt whole thing)
1/4 on 8 oz tub of Fat Free Whip Cream (not sure but is 0 for 2 tblsp
so I made it 1 pt in my book)
Mixed the cake, 1 1/4 cup water, and the pkg of jello mix well about 1 min tops. Place in pan in over for 40 min 350 remove cool a few hrs. Cool upside down in the pan. Frost with 2 oz of the whipped cream.
